im not just the average mma (or should i say ufc fan) who only knows the "popular" fighters, but i also don't know everything. i watch alot of ufc and only watched pride for about the last two years it was on. so with that said i know i missed out on alot of great fights and alot of great fighters that i don't know of and im not just talking about the "popular" pride guys either, i watch wandy, big/li/ nog, shogun, ect... so just to help people be more rounded like myself, what is one fight and one fighter that you think every REAL mma fan should know and watch.
i really liked the diaz vs. gomi fight and the Don Fyre vs Takayama

Yes there was a legend named CroCop who put on a great show My Fav was him KOing Aleks and watching Aleks fall like a tree oh mad did that make Fedor mad
I just hope he returns to form and makes his way through the UFC to beat Nog
Gomi was a monster too

Just wanted to mention fights not yet mentioned, the one that always stands out to me is Sakuraba V Royce Gracie.
Sakuraba was a living Legend and his fight against Royce was awsome.
