The chicken wing is a legit move dude. You can get it on someone defending a RNC.

The rear naked cross-face nipple lock is tough to do but very effective. I only saw it used once in the bedroom........Painful as hell

Now that we've ruined this thread with pro-wrestling (I blame hippysmasher), the best pro-wrestling move is the Phoenix Arrow Driver by Hayabusa. I think one of the Hardy Brothers ripped it off in WWE. Its the backflip from the top rope with a half twist and 450 degree somersault into a splash.

Personally, I like an armbar when its peformed with lightening precision (Sakuraba vs Randleman, Fedor versus Coleman) or when its transitioned into from something else (like Nog's Triangle Choke into armbar against Coleman)
My favourite all time submission though has got to be the rolling front choke by Nogueira to Hirotaka Yokoi, or Hidehiko Yoshida's Judo choke in againt Yoshi Tamura, brought back memories of using that choke myself
