The Culinary Union has been a thorn in UFC president Dana White’s side for quite some time. The Union’s efforts to block the UFC at every turn has been particularly loathsome in New York, where it has stymied the promotion’s efforts to open up the state to sanctioned mixed martial arts events for several years.

I'm not sure I understand how the culinary union has enough pull to block MMA in New York versus the UFC and all MMA fans in that area. It just doesn't make sense to me.

However, this is in response to the UFC's owners not allowing unions in Vegas casinos. I'd think having events in New York would be worth allowing culinary labor to unionize, but I guess the Fertitas want to have their cake and eat it, too.

The union has lots of members. They can help vote candidates whom are friendly to them into power, or help support them at rallys etc. and they can also afford to bribe them.

If you're a politician and you're giving a speech or rally, it's handy to have a large crowd at your disposal. It helps your image

Almost all of the casino's in Vegas are unionized, Station Casino's (owned by the Fertitta's are the last of the large un-unionized casinos in the city). The Culinary Union is part of a larger Union called Unite Here and its headquartered in New York. They are also a frequent contributor to political campaigns,

The Culinary Union doesn't need to have much influence to block MMA in New York anyways, they only need to influence one person and that's the speaker Sheldon Silver. One of his largest campaign contributors happens to be Unite Here.

They know if the proposal goes to a vote it will pass and MMA would be legal so they influence him to prevent the measure from being voted on. They have done this the last few legislative sessions, so until he loses an election he will continue to prevent that vote from ever happening.
